Fried Cucumbers

In honor of the upcoming Iowa State Fair (where everything is fried!), I give you
recipe number five from the "Too Many Cucumbers?!" series.

Fried Cucumbers

Ingredients:

  • 4 cucumbers, peeled and thinly sliced
  • salt and pepper
  • 2 eggs, well beaten
  • 1 cup fine dry bread crumbs
  • 1/4 cup vegetable oil

Directions:

Season cucumbers with salt and pepper. Dip slices first in egg and then in bread crumbs. Fry in vegetable oil. Brown on both sides, drain, and serve hot.
6 to 8 servings.

  1. We love anything fried down here....alligator, fish, squash, crawfish, etc.

    I think it is so neat how the grease drained green. Cool!!
