Rice Pudding

I absolutely love this recipe - it's a creamy, thick and sweet rice pudding!

Ingredients:
2/3 cup sugar
1/4 cup flour
2 cups milk
2 eggs, beaten
2 1/2 cups cooked rice
1 cup raisins
2 tsp vanilla
cinnamon to taste

Directions:
Mix sugar and flour in sauce pan over medium heat. Gradually stir in milk, stir constantly until boiling. Cook 1 more minute after mixture begins to boil. Remove from heat to temper the eggs. Add tempered eggs to the mixture. Cook on low heat until thick. Mix in vanilla, rice, raisins and cinnamon.

Note: I think this tastes best warm, right off the stovetop! It does make a lot, so when reheating I recommend adding a few splashes of milk before popping it in the microwave to keep the creamy consistency.
