How to Temper Eggs

Step 1
Add a small amount of the hot mixture to the egg, stirring vigorously.

Step 2
Once the egg is well incorporated, add a little more hot mixture and stir some more.

Step 3
Place the egg mixture back in with the rest of the hot mixture.

Step 3
It is very important that you add them slowly to whatever you are cooking. If not, you may end up with scrambled eggs!

  1. Dorrene - (I assume you're commenting on the rice pudding recipe) Whoops! I kind of forgot that one major ingredient when I was typing out the directions! Thanks for pointing it out and you add the rice at the end, when you add the raisins, etc.
