Four-Way Hash

This recipe is adapted from Mimi's Slumgullion on AllRecipes.com. I dramatically decreased the amount of oil, increased the amount of potatoes and simplified cooking directions. I also changed the name, since a slumgullion is a watery meat stew and this is definitely not.

Ingredients

1 tablespoon vegetable oil
1 onion, roughly chopped
6 potatoes, diced into bite size pieces
2 green bell peppers, diced into bite size pieces
1 (16 ounce) package beef kielbasa or smoked sausage, diced into bite size pieces
salt & pepper to taste


Directions
Heat oil over medium heat. Toss all ingredients into pan, cover and cook for about 30 minutes, stirring occasionally.

  1. I'm not a big fan of bell pepper, but hubby loves them...so I may give this a try since it sounds soooo easy!

  2. Thank you for joining us for Five Ingredient Fridays! This sounds easy, and good. I usually do hash browns, but have never added anything but seasonings to the potatoes. I may try this for our Sunday breakfast.
