Easy Beef Enchiladas
(yield: 6 enchiladas)
Ingredients:
1 1/2 cups leftover taco meat filling (or you can season your ground beef any way you'd like - or don't even use beef, use chicken or just cheese!)
1 cup cheddar cheese
homemade tortillas (very quick and very easy! one batch makes about 6 tortillas.)
1/2 cup enchilada sauce (use canned or make some from scratch)
Directions:
Make your tortillas (or use store bought, but I highly recommend making your own!).
Preheat oven to 375 degrees.
Fill tortillas with 1/4 cup beef and 1/8 cup cheese.
Roll up and place crease side down into baking dish.
Once you have all enchiladas rolled and in dish, cover with 1/2 cup enchilada sauce and top with remaining cheese.
Bake for 15 minutes at 375 degrees.
