Egg Casserole

12 eggs, beaten
1 pound ground breakfast sausage
12 ounces shredded Cheddar cheese
4 slices bread, torn into pieces
1/2 medium onion, diced
1 bell pepper, diced


  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Brown sausage in a large skillet over medium-high heat. Drain off grease, and allow to cool.
  3. In a separate large bowl, combine all ingredients, mixing well. Cover with foil.
  4. Bake at 350 degrees F (175 degrees C) for 15 minutes. Uncover and bake until casserole is golden brown and bubbly. (approx 10 more minutes)
