Homemade Graham Crackers!

Rowan is a little cracker monster - she loves them to the point of near-addiction! And for the last few days, all we had left were Ritz and Club Crackers, both of which are a tad salty for a baby. (or at least in the quantity she consumes them!) So, I found a graham cracker recipe and we made them after lunch!

Homemade Graham Crackers

(ever so slightly changed from the original at AllRecipes.com)

INGREDIENTS

  • 1/2 cup margarine
  • 3/4 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 3 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup milk

DIRECTIONS

  1. In a medium bowl, cream together the margarine and brown sugar. Stir in the vanilla. Combine the flour, baking powder, baking soda and stir into the creamed mixture alternately with the milk. Cover and chill dough until firm.
  2. Preheat oven to 350 degrees F. Grease cookie sheets or use parchment paper. On a lightly floured surface (I used the plastic bag from boxed cereal and sprinkled sugar on top to keep the dough from sticking - no extra flour needed!), roll the dough out to 1/8 inch thickness. (definitely get these 'Kate Moss/cracked-out-super-model thin' - they'll rise in the oven more than you might think!) Cut into rectangles (or use cookie cutters). Place 1/2 inch apart onto the prepared cookie sheets.
  3. Bake for 10 to 12 minutes in the preheated oven, or until crisp. (I had to cook mine that were about 1/4" thick for about 18 minutes) Edges will be golden brown. Remove from baking sheet to cool on wire racks.
